my wonderful friend katie (american who has been living in edinburgh for the past 8 years) introduced me to a place called lupe pinto's (lupepintos.com) yesterday, here in edinburgh. since dustin and i moved to scotland, many of our acquaintances have mentioned this mystical place as a 'mexican food haven'...but i had to see it to believe it. the shop is a 'mexican deli' (not sure i've ever heard those two words put together to describe anything before) the size of a walk-in closet which has a selection of american/mexican goodies for those necessary mexican binges. (hot sauces, freshly made guacamole, tortillas, cheeses, chorizo, bisquick, aunt gemima pancake mix, betty crocker cake mixes and icing, canned pumpkin and stuffing, etc...) anyway, we had a enchilada casserole last night with real corn tortillas, verde enchilada sauce, legit tortilla chips - plus queso and black beans, thanks to our wonderful mothers, keeping our bootleg supply of velveeta replenished often. oh! and i picked up a lone star beer for dustin, which he noticed tasted like water after getting acclimated to scottish ales. dustin's mom also sent a care package which arrived yesterday containing, among other things, rotel and more wick fowler's 3-alarm chili mix. bring on the cold weather...
