
we had a post-marathon mexican food extravaganza, as any athletes should after months and months of intense training and responsible dining. emily and simon had their first ever queso and homemade pico de gallo, followed by chicken verde enchiladas, barracho beans, and mexican rice. thanks to mom’s halloween care package, we had orange and black corn tortilla chips (only in america!), pumpkin peeps (another first for our scottish friends), and emily’s margaritas garnished with margarita salt that mom sent. (note that emily had to scrape ice from our over-frozen, dorm-sized fridge/freezer to get these bad boys on the rocks…sheer determination, i tell you.) we headed out for some drinks (in pumpkins?) afterward and saw loads of crazy halloween costumes around town. now it's back to some semblance of a training schedule to ward off the winter blues...
